Stuffed Chocolate Chip Cookie Bites

Want to make your friends think you’re a gluten-free goddess? Make these stuffed cookie bites. With only two ingredients and minimal preparation, these lovely little treats will take a smidge of madness out of the holiday rush.

Now, who’s ready for a mani?

ingredients

14 ounces prepared gluten-free cookie dough

6 gluten-free chocolate sandwich cookies broken into fours

24 mini paper cupcake liners

directions

Preheat oven to 350°F. Prepare one 24-cup mini cupcake tin (or two 12-cup tins) by lining with cupcake papers. Set aside.

Scoop about one 1/2 teaspoon of cookie dough into the bottom of each cup. Press 1 chocolate cookie piece on top of each cookie dough cup. Top chocolate cookie piece with an additional 1/2 teaspoon of cookie dough, pressing down to fully cover the chocolate cookie.

Bake for 10 minutes or until tops of cookie bites are golden brown. Transfer to a baking rack to cool.
